ICELANDIC LAMB AVAILABLE FOR RESERVATION
We are now accepting reservations for Icelandic Lamb by the whole or half. This is a great way to experience the lovely, mild taste of Icelandic Lamb at the best price possible! Bulk ordering allows you to get a wide variety of cuts all at once for a good price. It eliminates a lot of trips to the store or farmer’s market, and you can control what you get. Don’t like roasts? No problem! Love stew meat? Can do.
First you choose how big a portion you want. Icelandic lambs average around 50lbs hanging weight (how much the carcass hangs up at the processor), which is what the price is based off of. Yield of meat is around 60-65% of hanging weight depending on how many bone-in or boneless cuts you get. So for a half you are looking at around 30lbs of meat. One caveat to this is that if you get most of your lamb turned into boneless cuts or ground the yield will be much lower.
WHOLE LAMB: $5.00/lb hanging weight plus processing costs. So for that 50lb hanging weight you would pay $250 plus processing, which is usually around $125 for a lamb. That comes to $375 for ~ 35lbs of meat, which averages out to ~$10.75/lb of meat that you take home. This deal considering that you are getting everything from the ground lamb which costs $10.00/lb retail all the way up to the chops which go for $18.00/lb retail!
HALF LAMB: $5.25/lb hanging weight plus processing costs. So for that 50lb hanging weight you would pay for 25lbs @ $5.25/lb = $131 plus processing, which is usually around $65 for a lamb. That comes to $196 for ~ 18 lbs of meat, which averages out to ~$11/lb of meat that you take home. This deal considering that you are getting everything from the ground lamb which costs $10.00/lb retail all the way up to the chops which go for $18.00/lb retail!
We have limited quantity of lamb available for 2019, and reservations are taken on a first come first serve basis. Lambs will be sent to process in late November or early December which means they will be available before for delivery before the holidays. A deposit of $50 for a 1/2 lamb and $100 for a whole lamb will reserve your spot.

We have Beef & Kunekune pork available by the cut! Sausage, roasts, bacon, pork chops, steaks, ground beef and more are available!
Our Beef is Dairy Beef purchased from a 4-H’er at the 2019 Broome County Fair. We are donating 10% of profits back to Broome County 4-H to continue to support 4-H Youth Livestock programs!
